Honduras Yerin Sagastume
San Vicente is known for procuring and processing some of the best Honduran coffees available, and we have been thrilled to have the opportunity to get ahold of these delicious coffees.
At age 33, Yerin is one of the youngest farmers we've worked with, but he comes from coffee lineage.
The Yerin's grandfather and father both cultivated coffee, Yerin working with them since his childhood. His grandfather first gave to his father a little plot of land where planted coffee. With the proceeds from the sale of the crop, he bought other lots to grown coffee too. El Carreto farm was one of those lots. Yerin grew up as his right hand.
In 2014, his father started to prepare a specialty micro-lot with help of Beneficio San Vicente. And In 2018 his father gave Yerin the El Carreto farm, and this is his first year preparing a micro-lot of this farm. The success of Yerin and his family is that they pool the work together on their farms.
Processing: The cherries recollected are de-pulped every afternoon, then, the parchment is put into fermentation tanks where it is dry fermented for around 16 hours. After, the parchment is rinsed into the tank with a lot of water four times. Next, its put inside the parabolic solar dryer for 22 days, during which the parchment is sorted by hand to remove defective beans.
